Gluten-Free + High Protein & Low Sugar Banana Bread

INGREDIENTS
3 ripe bananas (the riper, the better)
2 eggs
1 3/4 cups of oat flour
1/4 protein powder (of your choice)
1/4 cup of maple syrup
1/4 cup of plain greek yogurt
1 tsp
1 tsp of salt
1 tsp of cinnamon (optional)
1 cup unsweetned dark chocolate chips (optional)

INSTRUCTIONS
First Things First — Set your oven at 350°F and line your pan with parchment paper.
In a large bowl, mash the bananas until smooth. A few small lumps are ok — it adds texture.
Add the wet ingredients (eggs, maple syrup, greek yogurt) and mix until fully combined.
In a seperate bowl, mix in the dry ingredients (flour, protein powder, baking soda, salt) if you are using cinnamon, add it in there too.
Combine wet and dry ingredients and stir until combined without overmixing the mixture.
Add-in the chocolate chips.
Pour into the loaf pan and smooth out with a spatula.
Bake for 55 minutes.
Cool before slicing.
