High Protein Spicy Chicken Dip

INGREDIENTS

  • 1 container cottage cheese (16 oz / 453 g, 2% fat)

  • 2 cooked chicken breasts, shredded (about 2 cups)

  • 4 pickled pepperoncini peppers, chopped (optional)

  • 2 green onions, chopped

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • ½ tbsp paprika

  • ½ tsp salt

  • ½ tsp black pepper

  • 3 tbsp hot sauce of choice (I used Yellowbird Habanero — buffalo works great too)

  • ½ cup freshly shredded cheddar cheese

INSTRUCTIONS

  1. First things first… if you’re baking your own chicken breasts, cook them fully and shred them while they’re still hot and fresh out of the oven. It pulls apart way easier this way. You can also use rotisserie chicken, canned chicken, or whatever you have on hand.

  2. Blend the entire container of cottage cheese until completely smooth (immersion blender or regular blender).

  3. Add the blended cottage cheese to a bowl with the shredded chicken.

  4. Stir in the pepperoncini, green onions, spices, and hot sauce.

  5. Mix until thick and well combined.

  6. Transfer to an oven-safe dish and top with shredded cheddar.

  7. Broil at 500°F (260°C) for about 10 minutes, or until the cheese is bubbly and browned like pizza.
