Starbucks inspired Whole Egg Bites

 

Inspired by the classic Starbucks egg bites — but made cleaner, simpler, and way more satisfying. These are packed with real ingredients, solid protein. Perfect for starting your day strong, keeping your energy stable, and staying out of the drive-thru line. Let’s get into it.

INGREDIENTS

  • 6 large eggs

  • 1/2 cup (35g) of white cheddar

  • 1/2 cup (120g) of cottage cheese

  • 8g chopped serrano pepper

  • 45g finely chopped red pepper

  • chopped green onions for topping (optional)

INSTRUCTIONS

First Things First — Set your oven at 300°F.

  1. Finely chop the serrano pepper and red pepper. If you have any leftover red pepper, feel free to snack on it while you cook.

  2. Grate your white cheddar cheese.

  3. In a blender, combine the eggs, cottage cheese, and grated white cheddar. Blend until smooth — but don’t over blend or it’ll get too airy.

  4. Line a muffin tin with bleach-free baking cups and pour in the egg mixture evenly. Under the muffin tray should be a regular tray with water to ensure the egg bites stay moist.

  5. Add your chopped peppers (or any other toppings) into each cup and give it a light stir.

  6. Optional: Add green onion on top for extra flavor and color — no need to mix it in.

  7. Bake at 300°F for 35 minutes. Done!
